Delicious high protein chocolate pudding made with only five ingredients. An easy to-go treat, this plant-based chocolate pudding is sure to be enjoyed by chocolate lovers. The simplicity of this pudding (only 5 ingredients) offers a great alternative to commercial puddings that may contain additional sugars, preservatives and emulsifiers.
This protein-packed snack combines two protein sources: peanut butter and tofu. If you’re new to consuming tofu or looking for a “sneaky” way to add it to your diet, this recipe is for you.
What is tofu?
Tofu is made with soy beans that are soaked, crushed and boiled and ultimately separated from curds and whey (similar to cheese making). The remaining curds can be formed into various textures such as silken, soft, firm, or extra firm. For example, silken tofu works great in sauces, smoothies, puddings, etc. Extra-firm tofu helps to maintain shape (less crumbling) during frying, baking, grilling, etc.
What are some significant nutrients in tofu?
Tofu is packed with protein. For example, 1/2 c or 4 oz of plain, extra firm tofu contains ~10 grams of protein! It’s a complete protein so it provides all the essential amino acids. It is a great source of healthy fats, calcium, and iron.
How does tofu taste?
Tofu is considered a mild and neutral tasting food. The great thing about tofu is it’s adaptability to take-on any flavor of your choosing. This is why you may see tofu used in a variety of savory and sweet dishes (especially in Asian- and Indian-inspired cuisine).
Plant-Based Chocolate Pudding Recipe
Yields: 5-6 servings (about 1/2 c per serving)
Prep Time: 5 minutes, Total Time: 10 minutes (plus, add’l 1 hr to firm, as needed)
Ingredients:
16 oz package of silken tofu
3/4 c dark chocolate or semi-dark chocolate pieces
1/4 c creamy peanut butter
1/4 c maple syrup (adjust to sweetness preference, as needed)
1 tsp vanilla extract (optional)
Instructions:
- Melt chocolate pieces in microwave-safe bowl for 30 seconds and stir. Repeat the process in 30-second intervals 2 or more times until the chocolate is smooth. Note: by doing this process you prevent burning the chocolate.
- Place all ingredients in food processor and puree until evenly combined (30 seconds to 1 minute). Scrape-down sides with spatula and combine, as needed.
- Scoop 1/2 c portions into mini 4-6 oz jars with lids (such as one’s shown above). Place in fridge for at least 1 hour to firm pudding. Can store in fridge up to 1 week until ready to consume.
