Looking for a new spin on the trendy chia seed pudding? Check out my delicious recipe for tiramisu chia seed pudding. Chia seeds are known for their high fiber and healthy fats. Not only are they great for making pudding; chia seeds can be added to smoothies, oatmeal, topped on yogurt, or added to fruit teas. This recipe is packed with protein making it a satisfying sweet treat. This tiramisu chia seed pudding is best served as a dessert or snack.

Tiramisu Chia Seed Pudding Recipe
Ingredients
Yields: 2-4 servings
Equipment needed: 2 pint size mason jars, food processor, small whisk, small sifter
Layer 1:
2 c almond milk
4 Tbsp chia seeds
2 tsp cacao powder
2 Tbsp maple syrup
Layer 2:
8 oz silken tofu
1 espresso shot
1/2 tsp cinnamon
1/2 tsp cardamon
2 Tbsp maple syrup
Layer 3:
1/2 c vanilla Greek yogurt
Extra cacao powder for sifting
Instructions
Layer 1:
- Divide milk between mason jars. Each jar will get 1 c milk. Tip: use the measurement markings on the side of the jars for convenience.
- Divide chia seeds, cacao powder, and maple syrup between jars. Each jar will get 2 Tbsp chia seeds, 1 tsp cacao powder, and 1 Tbsp maple syrup.
- Using small whisk, whisk together all ingredients until combined. Allow at least 30 seconds to 1 minute of whisking for mixture to blend together (see image below).
- Set jars aside. Allow 10-15 minutes to help set the pudding. Whisk one more time before adding next layer.
Note: For the first layer, option to combine all ingredients into medium-sized mixing bowl and dividing between the two mason jars.
Layer 2:
- Using food processor, add all ingredients listed (tofu, espresso, cinnamon, cardamon, and maple syrup) and puree until well-combined (about 30 seconds). Tip: scrap-down sides with spatula and continue to pulse, as needed.
- Divide mixture between mason jars (about 1/2 c each). This layer will sit on top of chia pudding.
Layer 3:
- For the top layer, add generous dollop of vanilla Greek yogurt (about 1/4 c).
- Sift extra cacao powder on top of yogurt
- Cover with lid and place in fridge for 1 hour to help set all layers of the pudding
- Serve when ready. Enjoy!
