An easy and delicious pesto recipe. This pesto is perfect for adding flavor to meats and fish, as a topping for soups, or served as a spread for bread and vegetables.
Traditional pesto includes fresh basil, pine nuts, and olive oil. This upgraded pesto recipe contains delicious pistachios, nutritious kale, and other yummy flavors. This pesto makes for a fresh addition to savory meals and snacks.
Simple Pesto Recipe
Yields: 1 c pesto
Prep Time: 10 minutes, Total Time: 20 minutes
Ingredients:
2 c kale, roughly chopped
1/4 c fresh parsley, chopped
1/2 c fresh basil, chopped
3 Tbsp pistachios, whole
1/4 c fresh parmesan cheese, grated
1/4 c extra virgin olive oil (additional, as needed)
pinch of salt and pepper, to taste
Instructions:
- Place all ingredients into small food processor. Pulse chop to combine.
- Using small basin on lid of food processor, slowly add olive oil as you continue to pulse the mixture. Adjust oil and seasonings to preference, as needed.
- Using spatula, pour mixture into small storage container and store in fridge up to one week. Can also be stored in freezer (up to six months) and used for future meals and snacks. Enjoy!
