
Lavender is most often used for aromatherapy and helps to promote relaxation. It’s commonly used in candles, cosmetics, detergents, soaps, teas, and baked goods. Adding lavender to a frozen summer treat is another great way to utilize this fragrant herb. Combining the tart, citrus flavor of lemon with lavender makes for a refreshing flavor combination. Enjoy these easy and delicious popsicles all summer long.


Lemon Lavender Popsicles Recipe
Yields: 6 (4 oz) servings
Prep Time: 10 minutes, Total Time: 4 hrs (or until frozen)
Ingredients:
2 whole lemons, peeled (see tip below)
1 c coconut water
3/4 c water
1 Tbsp dried culinary lavender blossoms (this can be found with online retailers such as Amazon or at your local health food stores)
1/3 c local honey (adjust to sweetness preference, as needed)
Directions:
Optional: combine the lavender with the coconut water and water in a glass jar (or measuring cup) and allow to sit for 5-10 minutes to infuse the lavender flavor. Also, can cover jar with lid and let sit overnight for a more intense flavor.
- Combine all ingredients in high speed blender. Tip: if you’re using 4 oz (x6) molds ensure the final mixture equals 24 oz (add additional water, as needed).
- Blend on highest speed for about 1 minute or until all ingredients are evenly blended and solids are pureed.
- As needed, place blended mixture into a large (32 oz) pourable container to allow for easy pouring.
- Slowly pour mixture over small, fine-mesh strainer into a small bowl with spout (such as a 32 oz measuring cup).
- Use a small spatula or spoon to press pulp in strainer (helping to extract extra liquid). Pour in batches to prevent overflow in strainer (discard excess pulp, as needed). Try moving spatula or spoon in slow circular motion in strainer to move liquid through to bowl.
- Fill popsicle molds with strained mixture. Add popsicle sticks and place in freezer for at least 4 hours or until solid.
Tip: To peel a lemon: start by slicing-off both ends of the lemon. Next, carefully slice down the sides of the lemon by curving your knife against the lemon (removing most of the pith or “white stuff”). See image below (ends of lemon to the left, sides of lemon to the right).
