Creamy Coconut Peach Popsicle Recipe
Yields: 6 (4 oz) popsicles (recommend popsicle mold)
Ingredients
2 c fresh peaches, peeled and sliced (approximately 5 medium peaches)
1 c plain coconut yogurt
3/4 c plain coconut water (no added sugar)
2 Tbsp fresh lemon juice
2 Tbsp honey
Instructions
- Place all ingredients into blender or large food processor. Blend on low speed for 10-15 sec to keep small pieces of fruit in popsicle OR blend on medium-high speed for 30 seconds for thinner, less chunky fruit consistency. Note: I recommend tasting mixture. Add additional 1-2 Tbsp honey to taste, as needed.
- The final mixture should equal ~24 oz. Pour mixture into individual popsicle molds and place sticks/covers into each popsicle.
- Place popsicles into freezer. Allow 4-6 hours to completely freeze.
