Hummus has become a popular food in the U.S. over the past several years. Traditionally rooted in middle eastern cuisine, hummus is enjoyed with many different flavors including spices, herbs, oils, etc.
Most commercial grocery stores carry a variety of brands and flavors of hummus. However, making your own hummus can often be a tastier option. With a few extra tips, you’ll create a creamy and flavorful hummus that will surpass grocery store varieties.
Tips for Making a Creamy and Delicious Hummus:
- Place beans in a small saucepan and cover with water (just enough to cover beans in pan). Add 1 tsp baking soda and place saucepan over medium-low heat to create a soft boil for about 5 minutes. Strain the beans and rinse with cold water. Next, remove some of the outer shells (see photo below) of the beans (this will help to create a smoother hummus).
- Once ingredients for the hummus are in the food processor, add 4-5 ice cubes, then blend. The ice helps to create a light and fluffy texture.

2 cans butter beans (or great northern beans)
1 fresh lemon, squeezed
1/3 c tahini
2 garlic cloves
2-3 tbsp extra virgin olive oil
1 tsp sea salt
1 tsp baking soda
1/4 c cold water
4-5 ice cubes
Suggested Toppings: diced fresh tomatoes, diced roasted garlic, olive oil, fresh chopped or dried herbs including basil, oregano, or cilantro
Serve with warm sourdough, pita, or naan bread
Directions:
Place small pan over medium heat on stovetop. Warm a drizzle of olive oil and add garlic cloves. Heat garlic cloves until lightly browned and aromatic. Remove from heat and set aside.
Drain and rinse beans in strainer with cold water (about 30 seconds).
Add beans to medium saucepan and cover with water just until beans are completely submerged. Add baking soda and stir. Place saucepan over medium-low heat to create a soft boil. Boil for about 5 minutes. Remove from heat and strain beans with cold water. Next, remove some of the outer shells (coatings) from the beans (see photo).
Add beans to food processor along with the roasted garlic cloves, lemon juice, sea salt, tahini, water, and ice cubes.
Blend for 1-2 minutes while slowly adding the olive oil into the food processor plunger/filler on lid. Taste and adjust with any additional flavors (i.e. salt, lemon, oil, etc.), as needed. Add more water to thin hummus, as needed. Blend an additional 1-2 minutes to ensure a smooth and creamy texture.
Add hummus to a serving bowl or platter using a spatula to smooth. Add toppings of choice, as listed above. Enjoy with fresh, crusty bread.
