As a registered dietitian (RD), I’m always searching for snacks that are, as Goldie Locks says, “just right”. These quinoa almond butter energy bites are packed with a lot of sweet and nutty flavors and textures.
These quinoa almond butter energy bites are a great snack for work, school, or on-the-go. They’re a great balance of sweet, crunchy, and smooth textures. The added toasted quinoa offers extra protein, toasty flavor, and added crunch. The almond butter gives it a smooth, nutty flavor. Additionally, they’ve got coarsely-ground oats for fiber, coconut flakes, maple syrup and chocolate chips for sweetness. Packed into a bite-size snack, these quinoa almond butter energy bites are a delicious and healthy snack choice.
Ingredients:
2 c quick oats
3/4 c uncooked quinoa (white or tri-color)
3/4 c smooth almond butter
1/2 c mini semi-sweet chocolate chips
2/3 c sweetened flaked coconut
2-3 Tbsps water (helps to bind ingredients)
Directions:
- Start by heating a medium, non-stick pan over medium heat. Place uncooked quinoa in heated pan, stirring occasionally. Allow the quinoa to toast for about 5 minutes or until it becomes lightly browned and you notice popping. Transfer quinoa to large glass mixing bowl.
2. Place quick oats into a food processor and process until oats become a coarse flour.
3. Add oats and remaining ingredients to mixing bowl with quinoa. Using your hands mix ingredients until combined. Use water (1 Tbsp at a time) to help bind ingredients, as needed.
4. Using a small to medium batter scooper, form bites. Once formed, place on a lined baking tray.
5. Place bites into the refrigerator for 20-30 minutes to firm.
6. Store bites in air-tight storage containers for up to 1 week in the fridge or 6 months in the freezer.
