The perfect treat for a hot day or post-workout snack. These watermelon strawberry popsicles are a tasty delight with the addition of gut-healthy probiotics. This recipe uses a popsicle mold, however, you can also use paper cups or ice cube trays to make this delicious snack.

Popsicles are a timeless summer treat for both kids and adults. I can remember growing up with various fruity frozen treats including “Pop Ice” (the blue and pink were my favorite), Flintstone’s orange “Push-Up Pop’s”, and these yummy strawberry popsicles that were regularly purchased. I’ve come a long way with my preferred frozen treats these days. I especially enjoy creating my own to try out new flavors. I also have control over of what ingredients go into my recipes. More delicious flavors and less added sugars is something I like to focus on when making my own popsicles and other sweet treats.
These watermelon strawberry popsicles are packed with flavor and no added sweeteners. The watermelon and strawberries provide a natural sweetness that is enhanced with a squeeze of fresh lime.
Watermelon lives up to its name; containing ~90% water and is a significant source of vitamin C and electrolyte’s including potassium and magnesium. It’s is a great snack for those hot sweaty day’s or intense workouts to help replenish sweat losses.
Additionally, these popsicles contain strawberries (one of my favorite fruits). Strawberries are a high-vitamin C food (more than oranges) and offer a significant source of fiber and folic acid. Did you know that consuming vitamin C with plant-based iron sources (non-heme) (beans, legumes, tofu, etc.) improves iron absorption?

Ingredients
2 c Watermelon, roughly cut into small sections
1 c Fresh Strawberries, cored and halved
1 Fresh Lime, squeezed
1 c Coconut Yogurt
Instructions
Place all ingredients into a large food processor or blender. I have a Ninja blender that does a great job with even consistencies (no left-over chunks of fruit), (check it out here: https://amzn.to/3P2t75I).
Blend (about 1-2 minutes) all ingredients are combined and you’re left with a smooth consistency.
Next, pour mixture into molds. I’m using Tovolo popsicle molds (check it out here: https://amzn.to/45kPpou ). Each mold makes a 4 oz popsicle. For 6 (4 oz) popsicle molds, you’ll want about 24 oz of mixture (add additional ingredients, as needed).
Pouring Tip: You can use silicone funnels to make pouring into molds easier. I enjoy this pack of four funnels to use in my own kitchen (check it out here: https://amzn.to/3s3eu8X ).
Place popsicles into the freezer for 2-3 hours or overnight. Enjoy!
