For the chocolate lovers out there, this double chocolate peanut butter energy bite recipe is for you. These chocolatey energy bites are perfect when you’re craving something sweet and on the healthier side. This recipe includes double chocolate including cacao powder and cacao nibs. Cacao is different from cocoa in that it is “raw” or less processed and doesn’t typically involve roasting. For this reason, cacao (compared to cocoa) often contains higher amounts of nutrients including magnesium and iron. You can find cacao products at most health foods stores (other recommendations in links below).

Double Chocolate Peanut Butter Snack Bites Recipe
Yields: about 12 bites
Ingredients
1 cup whole dates, de-pitted and softened (submerge dates into warm water for 10 minutes)
2/3 c rolled oats
1/4 c smooth peanut butter
1 Tbsp chia seeds
1 Tbsp hemp hearts
1 Tbsp cacao powder
1 Tbsp cacao nibs (can also substitute with dark chocolate pieces or mini chips)
Optional: “pinch” flaky sea salt
Instructions
- Line small baking sheet with parchment paper
- Place softened dates (without water) into food processor and pulse using “chop setting”. Using spatula, scrape-down sides and pulse again (repeat 2-3 times to ensure even texture).
- Place chopped dates and remaining ingredients (except sea salt) into medium-sized bowl.
- Using your hands (works best), knead ingredients in bowl until well combined (1-2 minutes)
- Form mixture into small (1 inch diameter) bites and place onto baking sheet. Sprinkle bites with optional flaky sea salt. Tip: it helps to roll the bites over any excess salt in pan.
- Place baking sheet into fridge and allow bites to chill for 15-30 minutes.
- Store bites into airtight container for storage in fridge. Can be stored in fridge for 1 week or stored in freezer for up to 3 months.
